The Paulaner brewery is synonymous with the monastery of the Paulaner monks who founded the brewery in Munich in 1634.

The Salvator was a vital development of the monks, an impressive dark bock that put them on the map to make even civilian brewers notice.

A letter addressed to the city council regarding concerns about competition would become the first documented evidence of the brewery, leading to 1634 being named the founding date of Paulaner Bräuhaus.

Today, Paulaner is a firm fixture at Oktoberfest, which started with its first beer huts at this festival.
